Mini Bananas Foster Lava Bundts

Mini Bananas Foster Lava Bundt Cakes

Ingredients
- 1 cup mashed ripe bananas (2-3 bananas)
- 1 egg
- 1/2 cup milk of choice + 1 1/2 tsp apple cider vinegar (this acts as homemade buttermilk)
- 1/3 cup olive oil
- 2/3 cup greek yogurt
- 2 tsp vanilla extract
- 3/4 cup granulated sugar
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 4 tbsp unsalted butter
- 1/3 cup light brown sugar
- 1/3 cup maple syrup
- 2 tsp vanilla extract
- 1/2 tsp cinnamon
- Pinch of salt
- 1/2 cup heavy cream
- 3 bananas, diced
- 1/2 cup pecans, chopped
Instructions
- Preheat oven to 350F. Grease a mini bundt cake pan with nonstick cooking spray or butter.
- *You can alternatively make this into a large bundt cake! Do the same thing with greasing a large bundt pan with nonstick cooking spray or butter.*
- In a small bowl, combine your milk and vinegar. Whisk to combine, and let sit for at 5 minutes. This will act as homemade buttermilk!
- In a medium bowl, combine the flour, baking powder, baking soda, and salt. Whisk until well combined, set aside.
- In a separate large bowl, whisk together the bashed bananas, egg, milk/vinegar mixture, olive oil, greek yogurt, vanilla extract, and granulated sugar, until well combined.
- Add the dry ingredients to the wet, and use a wooden spoon or spatula to mix until just combined.
- Divide the batter evenly among the mini bundt cavities, filling each 3/4 of the way to the top.
- If using a large bundt pan, simply pour the batter into the pan.
- For mini bundts, bake at 350F for 15-18 minutes.
- For a large bundt, bake at 350F for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the middle comes out clean.
- Remove from the oven and allow to cool in the pan for 5-10 minutes, then run a knife along the edges, and invert onto a wire cooling rack.
- While the bundts are baking, make the bananas foster lava filling.
- Melt the butter in a large skillet over medium heat. Add the brown sugar, maple syrup, vanilla, cinnamon, and salt. Mix until the sugar has dissolved into the butter.
- Remove from skillet from the heat and stir in the heavy cream. Return to heat and bring the mixture to a simmer. Let cook for 4-5 minutes, stirring occasionally.
- Add the diced bananas and pecans, and cook until softened, 1-2 minutes. Let cool until warm.
- Once the filling and cakes are cooled, pour the bananas foster filling into the middle hole of the mini bundts. For a large bundt, pour around the top.
- Serve with a dusting of powdered sugar if desired.
