Tips for making Sourdough Lava Cakes:

  1. Quality Ingredients: Use high-quality chocolate and fresh sourdough discard for the best flavor and texture in your lava cakes.

  2. Chocolate Selection: Choose chocolate with at least 60% cocoa content for a rich, decadent flavor in your lava cakes.

  3. Gentle Mixing: Mix the batter gently until just combined to avoid over mixing, which can result in dense lava cakes.

  4. Proper Greasing: Grease the ramekins generously with butter to ensure the lava cakes release easily after baking.

  5. Fill Ramekins Correctly: Fill the ramekins halfway with batter to leave room for the lava to form during baking.

  6. Baking Time: Bake the lava cakes just until the edges are set but the centers are still slightly jiggly. Over-baking will result in a cake-like consistency throughout.

  7. Resting Time: Allow the lava cakes to rest in the ramekins for a few minutes after removing them from the oven. This helps them set slightly before unmolding.

  8. Unmolding Carefully: Use a butter knife to gently loosen the edges of the lava cakes from the ramekins before inverting them onto serving plates.

  9. Serve Immediately: Enjoy the lava cakes warm, preferably within a few minutes of baking, to experience the molten chocolate center at its best.
