Sourdough Waffles with Whipped Honey

All-purpose flour
Baking powder

Tips for Sourdough Waffles:
Healthy Sourdough Discard: Ensure your sourdough discard is healthy and active before using it in the recipe. Though it won't leaven as much as a fresh starter, the discard still adds flavor and texture to the waffles.
Room Temperature Ingredients: Use room temperature ingredients, including the sourdough discard, milk, eggs, and any other wet ingredients. This helps with proper mixing and ensures a consistent rise.
Preheating the Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions. Make sure it's hot before pouring in the batter to ensure even cooking and a crispy exterior.
Grease the Waffle Iron: Even if your waffle iron is non-stick, it's a good idea to lightly grease it with oil or cooking spray to prevent sticking and help the waffles release easily.
Pouring the Batter: Pour the batter onto the preheated waffle iron, using a ladle or measuring cup to distribute it evenly. Be careful not to overfill the waffle iron, as the batter will expand as it cooks.
Cooking Time: Close the waffle iron and cook the waffles until they are golden brown and crispy on the outside, typically 3-5 minutes depending on your waffle iron and the thickness of the batter.
Checking for Doneness: Open the waffle iron occasionally to check for doneness. The waffles should be golden brown and easily lift off the waffle iron with a fork or spatula when they're ready.
Serve Immediately: Serve the sourdough waffles hot off the waffle iron, topped with your favorite toppings such as butter, syrup, fresh fruit, or whipped cream. Enjoy them for breakfast, brunch, or even as a delicious dessert!

Sourdough Waffles with Whipped Honey

Ingredients
- 2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 cup sourdough discard or unfed starter
- 1 cup whole milk
- 2 tbsp granulated sugar
- 1/3 cup greek yogurt
- 1 egg
- 2 tbsp butter, melted
- 1 cup honey, can be crystallized
Instructions
- Start by making the whipped honey.
- Pour the honey into the bowl of a stand mixer. Using the whisk attachment, whip on high for 15-20 minutes or until the mixture turns to a pale white/yellow. Transfer to a glass jar, and set aside.
- *You will have extra whipped honey after serving with the waffles - it can be stored at room temperature or in the fridge*
- Preheat the waffle iron.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a separate large bowl, whisk together the sourdough discard or unfed starter, milk, sugar greek yogurt, and egg. Then, whisk as you slowly stream the melted butter into the mixture, until the butter is completely incorporated.
- Add the dry ingredients to the wet, and whisk until just combined, it’s okay if the batter is a little lumpy.
- Spray the waffle iron with nonstick cooking spray. Scoop or pour enough batter to cover the surface of each waffle section.
- Cook the waffles until golden brown (~3-4 minutes). Repeat with remaining batter.
- Plate the waffles and serve with a smear of butter, and a drizzle of the whipped honey.
