Tips for making Chocolate Chip Sourdough Crumpets:
Use Active Sourdough Discard: Use fresh sourdough discard (unfed starter) for the best rise and flavor. This will help create the characteristic holes and texture of crumpets. You can just used discard from the fridge as well.
Proper Mixing: Mix the batter thoroughly until smooth. Avoid over-mixing to maintain a light and airy texture.
Rest the Batter: Allow the batter to rest for at least 15 minutes. This rest period helps the batter develop gluten and improves the crumpet texture.
Warm Griddle or Pan: Preheat your griddle or non-stick pan over medium-low heat. This ensures even cooking and helps the crumpets develop their signature holes.
Use Crumpet Rings: For uniform shapes and size, use crumpet rings or metal cookie cutters. Grease the rings well to prevent sticking.
