Sourdough Crumpets

Tips for Sourdough Crumpets:
Sourdough Discard: Ensure your sourdough discard is healthy and active before using it in the recipe. Though it won't leaven as much as an active starter, the discard still adds flavor and texture to the crumpets.
Room Temperature Ingredients: Use room temperature ingredients, including the sourdough discard, water, and milk. This helps with proper fermentation and ensures a consistent rise.
Mixing the Batter: Mix the sourdough discard, water, milk, salt, and sugar in a large bowl until well combined. Gradually add the flour and mix until a smooth batter forms. The batter should be thick but pourable.
Resting the Batter: Allow the batter to rest at room temperature for at least 1 hour, or preferably overnight. This gives the sourdough discard time to impart flavor and adds depth to the crumpets.
Use Crumpet Rings: Grease your crumpet rings generously with oil or butter to prevent sticking. Place the rings on a hot, greased griddle or skillet before pouring the batter.
Cooking the Crumpets: Pour the batter into the greased crumpet rings, filling each about halfway. Cook the crumpets over medium-low heat until bubbles form on the surface and the bottoms are golden brown, about 5-7 minutes.
Flip Carefully: Carefully remove the crumpet rings using tongs or a spatula, then flip the crumpets and cook for an additional 1-2 minutes on the other side until lightly golden brown.
Cooling and Storage: Transfer the cooked crumpets to a wire rack to cool slightly before serving. If not serving immediately, allow them to cool completely, then store in an airtight container at room temperature for up to 2 days.
