Tips for Sourdough Discard Tortillas:

  1. Healthy Sourdough Discard: Ensure your sourdough discard is healthy and active before using it in the recipe. While it won't leaven as much as a fresh starter, the discard will add flavor and texture to the tortillas.

  2. Flour Selection: Choose your flour wisely. While all-purpose flour works well for tortillas, you can also experiment with whole wheat flour, spelt flour, or a combination of flours for added flavor and nutrition.

  3. Mixing the Dough: Combine the sourdough discard, flour, water, oil, and salt in a mixing bowl. Mix until a shaggy dough forms, then knead the dough until it becomes smooth and elastic. Allow the dough to rest for 30 minutes to relax the gluten.

  4. Dividing the Dough: Divide the dough into equal-sized portions, depending on how large you want your tortillas to be. Smaller portions make mini tortillas perfect for tacos, while larger portions create standard-sized tortillas for burritos or wraps.
