Tips for French Toast Sourdough Bagels:

  1. Healthy Sourdough Discard: Ensure your sourdough discard is healthy and active before using it in the recipe. Although it won't leaven as much as a fresh starter, the discard will still add flavor and texture to the bagels.

  1. Room Temperature Ingredients: Use room temperature ingredients, including the sourdough discard, Greek yogurt, and any other wet ingredients. This ensures proper mixing and fermentation, resulting in a light and airy bagel.

  2. Mixing the Dough: Combine the sourdough discard and Greek yogurt in a large mixing bowl. Add the self-rising flour, and mix until a smooth and slightly tacky dough forms.

  3. Kneading the Dough: Knead the dough on a lightly floured surface until it becomes smooth and elastic. Avoid adding too much flour, as this can result in dense bagels. The dough should be soft but not sticky.

French Toast Sourdough Bagels

Ingredients

Dough
  • 1 1/2 cups self-rising flour *see below for homemade self-rising flour*
  • 1 cup greek yogurt
  • 3/4 cup unfed sourdough starter or discard, can sub with 1/2 cup greek yogurt
French Toast Topping
  • 1 egg + 1 tbsp milk, for egg wash
  • 4 tbsp brown sugar or coconut sugar
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 2 tbsp all-purpose flour
Homemade Self-Rising Flour
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 375F. Line a baking sheet with parchment paper; set aside.
  2. Start by preparing the French toast topping. In a small bowl, combine the brown sugar, maple syrup, cinnamon, and flour. Mix until well combined. Set aside.
  3. Then, make the sourdough bagel dough. In a large bowl, combine the self-rising flour, greek yogurt and sourdough discard. Mix until well combined. The dough is going to be a little sticky, but just trust the process!
  4. Lay the dough on a generously floured surface and sprinkle some more flour on top of the dough. Use your hands to knead a couple of times, until the dough becomes smooth. If the dough still seems too sticky, add 1 more tbsp of flour at a time, and continue to knead until it comes together more and is moldable!
  5. Divide the dough into 8 equal-sized pieces.
  6. Roll each piece into a rope, and bring the ends together to form a bagel shape. Pinch to seal, and then place on the prepared baking sheet.
  7. Brush the tops of each bagel with the egg wash.
  8. Then, spoon some of the French toast topping mixture on top of each, and spread to cover the top of each bagel.
  9. Bake at 375F for 20-22 minutes, or until golden brown.
  10. Serve warm with cream cheese or butter.
  11. Enjoy!
