Unfed sourdough starter or discard

Tips for French Toast Sourdough Bagels:
Healthy Sourdough Discard: Ensure your sourdough discard is healthy and active before using it in the recipe. Although it won't leaven as much as a fresh starter, the discard will still add flavor and texture to the bagels.
Room Temperature Ingredients: Use room temperature ingredients, including the sourdough discard, Greek yogurt, and any other wet ingredients. This ensures proper mixing and fermentation, resulting in a light and airy bagel.
Mixing the Dough: Combine the sourdough discard and Greek yogurt in a large mixing bowl. Add the self-rising flour, and mix until a smooth and slightly tacky dough forms.
Kneading the Dough: Knead the dough on a lightly floured surface until it becomes smooth and elastic. Avoid adding too much flour, as this can result in dense bagels. The dough should be soft but not sticky.
